holidays in Puglia for years. Long stretches of golden beaches lapped by the cleanest waters in the Mediterranean,
seafood that is the envy of the rest of Italy and one of the most
sophisticated cuisines in the whole of Europe.

The holiday is based at ‘Impisi’, our beautiful Masseria which was
the subject of an outstandingly popular programme on Channel 4’s ‘Grand
Designs Abroad’ September 2004. Our venue was considered ‘inspirational’ by
Kevin McCloud the presenter.
We take daily excursions in our own minibus (no massive coaches, no
flag-waving guides.) to Fattorias, Cantinas, olive groves and vineyards to
meet the people who still continue the ancient traditions of oil and wine
production.

We
visit ancient cities where a wealth of historic architecture
reflects Puglia's tumultuous past of constant invasion and
settlement. The Greeks, the Romans, the Saracens, the Normans
and the Spanish have all left their imprint on this rich and
fertile land.

We visit markets and local producers to buy the freshest possible foods to
cook at Impisi, where every evening you enjoy a splendid dinner with a
choice of fine local wines in the company of new-found friends.
There is also a day of ‘hands-on’ cooking, hosted at a nearby 16thC. Masseria
and tutored by a local chef.

The atmosphere on Il Collegio Holidays is relaxed and informal. The
accommodation is exceptional with en-suite, air conditioned twin or double
bedded rooms that lead onto an arched patio and large landscaped garden with
a natural limestone swimming pool. Set in an ancient olive grove and within
sight of the sea.

This includes; Full board (except for five lunches on day excursions). Free
excursions. Museum entrances and cantina and fattoria tours and tastings.
Cooking tuition. Transfers from Brindisi Airport and return to Bari Airport
(the recommended route to take advantage of Ryanair schedules and prices).
Or pick-up from Ostuni Rail Station. All other transfers by arrangement. (It
does not include travel to and from Italy.)
